Shaves right out of the box. This blade shaved my arm straight out of the box. I successfully used this heavy blade to process several large hogs an two deer. I have not had to sharpen it yet. It s a slicer and a chopper. Glad I bought it.

Sharp (ouch) We really like this knife. Seriously though it’s pretty sharp and the wife and I have both cut ourselves while slicing bagels (because we hold the bagels like idiots). It has a really good weight and it is thick. The handle is wood and feels nice in your hand. I have several knives in the kitchen, but I wanted something that could take brutal force. This knife is one of my favorites now. It comes with a sheath, I honestly haven t used it yet. I just hang it on the magnetic strip. I like this knife so well I have used it to spread butter and jam. It is not designed for this task but I enjoy its heft so much I made it work. Seriously this is a fun knife to use.

Amazing Looking Knife This knife is a thing of beauty. I ordered it for my kitchen although it really looks like it would be best used for camping and outdoor activities. This full tang knife has an attractive wood handle. The blade is thick and heavy. The top of part of the blade is textured which looks amazing. This knife comes with a sheath. Although this knife is sharp, I will sharpen it some more as it s not as sharp as I prefer. Since I ordered this for my kitchen, I m using this knife in my kitchen. I ve used this knife to cut an acorn squash which is a tough task for any knife. The heft of the blade turned out to be helpful in cutting through the thick skin although care was needed because it was not easy to do. The thick blade plus how this knife is balanced was helpful in cutting through the squash s skin. I liked using this knife more than a larger, thinner, and sharper knife I also tried for comparison. My rating is 5 stars because I can t get over how this knife looks and feels in my hand.

Dont want to tell the truth First and foremost, when you find a great restaurant don t tell anyone, because the price of food goes up and there is no where to sit when you return. That s the same idea here, this knife is fabulous. Its built well and it cuts, believe me. I say this magical steel slice through a rack of ribs in seconds. When you hold this knife, your mind says" I don t care what, just bring it!" But don t tell anyone.

This made my dad and I closer My dad came over for dinner for the first time. I showed him this new knife and he said it was pretty cool, but how s it cut. Well let me tell you if there s one thing my dad likes, it s a whole chicken broken down into eight pieces. For a mid-range chef knife, Mercer definitely will fit your needs. I first encountered them in a restaurant I worked in and ended up ordering this one for everyday use in my own kitchen. I ve been really happy with it. It does get dull with regular use, but easily sharps right back up.

I have been on the hunt for a good kitchen knife for years. I decided to let fate take over and ordered this knife without seeing in person. I have nerve damage in my dominant hand so holding things can be difficult if they don t sit right. I am thrilled that this is my dream knife. Its not heavy or oddly balanced for me. The knife arrived in perfect condition two days ahead of schedule. Factory packaged in blister pack - expect to need scissors to open. Knife construction and materials are top drawer - beautifully made and well balanced. Blade thickness at delrin handle is equal to 2 dimes, thinning towards point to the thickness of a single dime. I expect a lifetime of use with this purchase. Will update if expectations are not met. As noted in pic, knife is constructed in Taiwan from high carbon stainless steel sourced from Germany. Sharp enough to easily shave hair right out of the package.

I have had two of these knives (for 2 and 3 years in two different kitchens). They are the most useful knives I have ever owned. They re sharp, and they stay sharp. The wood handle is really attractive and has stayed new-looking despite a lot of use and cleaning. This and a bread knife are all I need. It s got a good heft for chopping, and its large size is perfect for this as well. I don t see any reason to pay more or buy a different knife. A great purchase.

this is an extremely great blade. this blade is extremely hard and will keep the edge for a very long time but the downside is that the blade isnt very tough and is also really thin so it can snap fairly easy. it shouldn t be an issue for those who have at least 3 brain cells. the blade is beautiful and extremely light. And with all the chromium it wont rust. you will have to go out of your way to ruin this blade. extremely high quality for the price and the little case it comes with is really great

Purchased this on a whim because I needed a beater knife for when the in-laws or friends visited and needed to cook. For the price it’s a decent knife. The weight is a bit on the light end, especially when compared to my Wusthof chef knife but that blade was 3x the price. The knife came with a good edge out of the box but durability is still to be seen. I’d recommend for someone who just needs an extra “beater” knife or someone who just needs a cheap chef knife to get their knife collection started.

Lovely knife. Well worth the purchase : I love this knife. It s razor sharp out of the box. The blade has enough meat on it s bones to be sturdy, but not so much as to feel heavy to use. The handle is gorgeous and ergonomic, though "pakkawood" simply seems to be laminated acrylic impregnated wood very much like the gunstocks that you can buy. I prefer to have a chefs knife and this one very much fits the bill. I will update later if my impression changes for any reason , but so far I am very happy with this purchase as well as the set I bought. The only thing I haven t tested is the longevity of the blade and how it wears with use. This knife in particular will see the most use.

Lifetime Investment, well worth the price This knife has everything I hoped for to replace my ten year old cheap grocery store bread knife. In addition to being dishwasher safe, it has a much sturdier blade. This helps in two ways: first, it won t flex during use, which makes it safer. Second, having more metal on the blade means that it will be worth the price of a professional sharpening when the time arises.

Sharp and easy to clean :This is a sharp knife, be careful with it till you get used to the sharpness, unlike my old knife this one cuts on contact (could be your finger). Stays sharp, cleans up easy, and is now used for almost all cutting tasks in the kitchen. This handle makes it stand out from all the brown wood handles in my old knife block so it is always easy to see and grab.The feel and balance of the knife is excellent, and the sharpness is so good. Super sharp, cuts beautifully:Overall a great chef knives for use in a commercial kitchen. However, the blade has a high gloss polish that smears and picks up finger prints . It also has an extremely long grip. I have average size hands and I have an extra 2 inches of room. Great for some one with large hands but also this does hinder use by those with smaller hands.I am truly impressed with a knife that this one cuts or slices with such ease.Makes cooking so much easier.Great deal, great knife! Decent Knife - Excellent Value: Before I go further, this replaces knife that I have used every day for 30 years or so. I use a whetstone regularly and keep my knives very sharp. Any difference in feel creates an issue for me; something that will take time to get used to.On the plus side this knife is very good value. it seems to be well constructed of very good steel. This Is a Must Have Knife:I do a lot of cooking and I am always slicing meat and veggies. This is the sharpest knife I have ever used The knife will be sitting safely in its box only coming out for some boutique work. Why? quite honestly - and as a seasoned cook who makes 90+% of my food at home, this knife is a razor on wheels. Great for the price. I’m not a chef by any stretch. I bought the knife because I have big hands and thought it would be easier to use. I wasn’t disappointed, it’s large, heavy, and sharp. It took a bit but it is the only knife I use now. For the price it is hard to go wrong on this.

Fantastic knife This knife is well designed and fits your hand very well. It has a very sharp blade. I was cutting an old slightly wrinkled green pepper and it felt like it was rubbery and the knife went right though it with no problem at all. I really liked the form of the handle. It’s a decent heavy knife I love cutting, chopping, slicing, it does it all sharp blade. I’ve noticed myself cutting better, thinner, straighter, less effort out of my hand and more of the knife doing the work. I bought this knife from Almazan Knife.

Razor sharp. Great weight and balance to it as well. Beautiful sheath to keep it in. I cannot recommend this knife enough. Just took a hard cured Sausage from the fridge and it went through it like it was made of butter.
